Brunch Time!

Brunch has to be my favourite meal. Especially because its only really viable on weekends and days off, it just has connotations of lazy mornings and loads of good food.

Last Sunday, we had just come back from coxing and coaching a rowing outing ( I cox - steer/shout - sometimes although I've not really got the right personality to boss people about) and were considering what to eat. We normally have muffins or something with our Sunday brunch, but we didn't have any bread at all. We did, however, have a lot of potatoes! So James suggested we try to make some hash browns. Such a good idea. I looked up a recipe online and had a go. They were delicious!

Ingredients

  • 1 egg, beaten
  • 4 medium potatoes, unpeeled (the recipe says peel them but there's lots of nutrients in the skin!)
  • 1 medium onion
  • salt and pepper
  • vegetable oil for frying

Method

  1. Coarsely grate the potatoes and onion into a clean tea towel and then squeeze out the excess liquid by twisting the towel. Place the mix in a large bowl.
  2. Add the egg, a good couple of pinches of salt and freshly ground black pepper. Mix the ingredients well. (You need to salt the mix well otherwise the hash browns can be quite bland).
  3. Heat a good glug of oil in a heavy based frying pan and when the oil is hot (but not smoking), add spoonfuls of the potato mixture into the pan and flatten into patties about 1cm thick. Flip over once browned and crispy - about 2-3 minutes each side.
  4. Serve hot as a breakfast or supper side dish. Especially good with bacon and eggs.

  2. That photo is making me very hungry; brunch is my absolute favourite meal, normally because it's an excuse to eat the breakfast-y things I love but in larger amounts! I love hash browns, will have to give them a try. Wonder you got the crispy hash brown due to your listing narrowboat! :)
